This Alvarinho feels almost deliberately crafted as a little poem – a remarkably delicate wine, hinting at a nocturnal harvest and those crucial, cooler picking times. The meticulous pneumatic pressing at low temperatures ensures the intensely aromatic “tears” of juice retain their purity. Following six weeks of fermentation, guided by selected yeasts, the wine was sculpted in modest vats, and the prolonged batonnage – that patient contact with the lees – undeniably adds a layer of complexity referencing the distinctive terroir of Vinho Verde. Seriously, it pairs beautifully with grilled white fish or fresh shellfish.
