Following fermentation with indigenous yeasts and a three-week maturation, a gentle basket press ensures every last drop of fruit, particularly from the Touriga Nacional and Vinhas Velhas, is coaxed out, lending a rustic and complex character that’s practically begging for a hearty grilled beef dish. A brief time in French oak then adds a touch of elegance, beautifully contrasting with its wilder spirit.
