This Pouca Roupa from João Portugal Ramos is a rosé that genuinely feels like it’s just spent a very intense day at the beach. The grapes, gently chilled at 10°C to avoid any “exaggeration” of the anthocyanins, then left to rest for 8 hours to coax out those beautiful red aromas with a lovely vegetal touch, are transformed into a delicately pink wine. It’s a well-balanced wine with a vibrant acidity and a lingering finish – perfect with grilled fish or a vibrant strawberry salad, really.
