This white from Quinta da Bacalhôa – a place with royal roots, mind you – is a beautifully restrained wine. Crafted with Encruzado, Sauvignon Blanc, Alvarinho, and Semillon, it initially bursts with maracuja and sea buckthorn notes, layered with subtle tília and a hint of honey thanks to that clever "bâtonnage" on the Semillon. The firm structure and long finish, developed in new Allier oak barrels, suggest a lovely pairing with intensely flavoured fish dishes, or perhaps a mature Azeitão cheese. Simply put, a classic Bacalhôa – a testament to both tradition and a touch of clever innovation.
