This Quinta da Biaia wine is a testament to the art of waiting – crafted entirely from their oldest Syrah vines. Hand-harvested with almost reverent care, the grapes are gently pressed whilst still whole, ensuring maximum colour and aroma extraction. Following a 30-month maturation in French oak barrels (with a rather clingy lees layer, we suspect!), a further 4 months in the bottle refined the wine beautifully. The result is a remarkably elegant and complex white, ideal for pairing with freshly grilled fish, and perhaps even some scallops with seafood sauce – a combination sure to impress the most discerning palate.
