This “Noblesse Oblige” from Quinta da Falorca’s Encruzado bottling certainly doesn't shy away from a bit of showmanship. Those four months in new oak have clearly given it a serious dose of complexity, really waking up the palate. The constant “batonnage” – that little dance the grapes do in the fermenter – has delivered a wonderfully vibrant acidity. Hand-picked with the care the name demands, the grapes have been treated with a delicate touch during pressing, preserving their very essence. The result is a remarkably elegant white wine, absolutely ideal with grilled fish, or perhaps a truly classic bacalhau à Brás – a pairing it deserves.
