“This Tardia from Boas Quintas has experienced a little ‘shock’ – a rapid temperature drop to 0°C was implemented towards the end of fermentation to preserve the fruit’s freshness and those characteristic floral and fruity nuances of Encruzado and Malvasia Fina. A prudent move, certainly, and one that hopefully didn’t compromise the final result. The initial fermentation took place at a careful 12°C, reflecting the producer’s understanding of their terroir – and it pairs beautifully with grilled white fish, perhaps enhanced with a squeeze of lemon.”
