Description

**Quinta da Pacheca – Barrel Aging** **Barrel Maturation:** 12 months in French oak and second‑year acacia barrels, with weekly bâtonnage. **Grapes:** This wine is made from Viosinho and Rabigato grapes sourced from several vineyard plots planted at an altitude of 300 m. **Vinification Method:** After meticulous selection for optimal ripeness, the grapes were harvested into 25‑kg barrels and transported to the winemaking facility, where they were gently pressed using a pneumatic press. The resulting must was transferred to stainless‑steel tanks, inerted and cooled, then left for 24 hours to allow sedimentation. At the end of this period, it was moved to another stainless‑steel tank and inoculated with selected yeasts to initiate fermentation. After 48 hours from the start of alcoholic fermentation, the wine was transferred to 500‑L French oak and acacia barrels, where fermentation was completed.
