It presents intense aromas and flavours from a single high‑quality harvest, with a minimum of seven years in wood before bottling. It is an elegant wine with dried‑fruit aromas. Until about 1756, the “embarkation wines” – as Port was then called – followed the so‑called “old process” of vinification. Distillation, always in small volumes, took place only after fermentation was finished, producing dry wines. In 1820 the modern distillation process emerged, intentionally stopping alcoholic fermentation to yield sweet wines. This method only became widespread in 1852, by which time Port wines began to resemble their modern counterparts. Thus, Port wine is a fortified wine produced in the Demarcated Region of the Douro, under peculiar conditions from natural and human factors. The traditional process involves halting the must’s fermentation by adding grape spirit, vinification, and subsequent ageing.
