“SOU” by Quinta de Santiago and Mira do Ó is a delightfully defiant expression in a bottle – born from a shared passion for rock music and, of course, the very soul of the Monção and Melgaço vineyards. Remarkably, it’s crafted with minimal intervention, relying on indigenous yeasts for fermentation, split between 400L barrels and open-vessel aging. The grapes, meticulously selected on August 30th before the September rains, were perfectly positioned to benefit from the region’s thermal amplitude, delivering a vibrant acidity and a truly remarkable balance. It’s a sincere tribute to the land, and would pair beautifully with a simple tomato salad or, if you’re feeling adventurous, a fiery lamb curry – a flavour explosion conceived by enologist Nuno Mira do Ó. And, as praised by *Revista de Vinhos*, it’s an experience worth seeking out.
