Hand-harvested with obvious care, the natural fermentation – half in stainless steel, half with the grape’s own seeds – delivers a surprising depth of complexity. Remarkably, ageing in amphora adds another layer, with Quinta de Santiago boldly eschewing oak to highlight the wine’s delicate aromas. Perfect alongside fresh shellfish or a grilled white fish, it’s a truly delightful pairing.
