Hand-picked in 25kg boxes, the grapes showcase a vigorous ripening influenced by the northern exposure and a schistous soil, resulting in a wonderfully complex aroma profile of fresh mint from the oak, black pepper, and a burst of fruit. The fermentation, a fascinating blend of stainless steel and traditional lagar, allows the grape skins – packed with polyphenols – to fully integrate, boosting the wine’s structure and ageing potential.
