Quinta de São Simão da Aguieira Soil: Granitic/Arenitic Method of Cultivation: Simple ascending cordon Average Vine Age: Over 30 years Average Production: 40 hl/ha Vinification and Aging: After arrival at the winery, the grapes are chilled and taken to the press, where they undergo a very gentle pressing, using only the drain juice. The juice is then clarified to separate solids. Fermentation begins at a controlled temperature, between 16 °C and 17 °C, for about 10 days. After alcoholic fermentation, the wine ages on fine lees for 3 months. Bottling is processed in an inert atmosphere, with complete deaeration of the bottle.
