Quinta do Paral O Superior Tinto is a DOC Alentejo wine from Vidigueira, perfectly pairing with red meats and black‑pork sausages. It’s especially delicious alongside a dish of black‑pork cheeks. Vinification: After hand‑selecting whole bunches, the destemmed grapes ferment in a crush with mechanical press at a controlled temperature (24‑28 °C), followed by malolactic fermentation. The wine then matures for nine months in French and American oak barrels.
