Quinta do Pessegueiro The 2020/2021 growing season was marked by some fluctuations in temperature and annual rainfall compared to historic averages, although it was generally considered a normal and dry year. The harvest was long, fresh and rainy—starting essentially from the second half of September. The musts were of good quality, fresh, aromatic, with good acidity and slightly lower alcohol content. The grapes were harvested in September and transported in 22 kg crates to the cellar. After 12 hours in a refrigerated chamber, they were destemmed, partially crushed, and then gravity‑driven to the granite press, where indigenous yeasts carried out a complete alcoholic fermentation with foot‑pumping. The wine was then moved to 225‑liter tanks for malolactic fermentation. The aging took place in the same tanks for 16 months. The wine was bottled in June 2023.
