Quinta do Pessegueiro The 2020/2021 vintage was marked by some variations in annual temperature and rainfall compared to historic averages, yet the year was still considered normal and dry. The harvest was long, cool and rainy, especially from the second half of September. The musts were of good quality—fresher, aromatic, with good acidity and slightly lower alcohol content. The harvest took place in September. The grapes were transported in 22‑kg boxes to the cellar. They were kept for 12 hours in a refrigerated chamber, then destemmed, partially crushed, and gravity‑fed to a granite press where spontaneous fermentation with native yeasts completed the alcoholic fermentation using whole‑hand pressing. The wine was then transferred to 225‑L vats, followed by malolactic fermentation. Ageing took place in the same vats for 16 months. The wine was bottled in June 2023.
