Following a bold co-fermentation where the Syrah took the lead, a lengthy maceration post-fermentation has resulted in a remarkably intense character. A dual aging process, utilising new and old oak barrels, has polished the wine, but without sacrificing the distinctive expressiveness of the grape. Perfect alongside richly spiced red meats, perhaps a particularly robust wild boar roast.
