Fermentation, carried out with wild yeasts and a touch of nonchalance between 24 and 28 degrees Celsius, has yielded a wine brimming with vibrant character. Nine months ageing in French oak has subtly softened the edges, making it a particularly well-suited partner to a hearty beef roast, if you’ll indulge me.
