Quinta do Poço do Lobo Brut Natural Sparkling White Bairrada DOC Vinification: After a very gentle pressing of the grapes, the must ferments for 15 days in stainless‑steel tanks at controlled temperature. Following the classic method, the process starts with the first pressing, then refers to a second fermentation in a cellar for 25 days at 14 °C, after which the wine ages in bottles on lees for 18 months.
