Quinta do Poço do Lobo Brut Natural Sparkling Wine. Vinification: After a very delicate pressing of the grapes, harvested between early and mid‑September, the must fermented for 15 days in stainless‑steel tanks at a controlled temperature. Following the classic method, the winemaking began in early April 2018 with a draw using wild yeasts, then a secondary fermentation in the cellar for 25 days at 14 °C, followed by a 48‑month bottle‑aging period on lees. Aging potential: 3 years after disgorgement. Recommended pairings: Oily fish, oysters, white meats, and other delicacies.
