The harvest took place in the last week of August. The only grape variety harvested is Finesse Malvasia. The grapes were fully destemmed and immediately pressed. Half of the resulting must was transferred to used 250‑litre French oak barrels, where it fermented with indigenous yeasts and aged for six months; the remainder fermented in stainless‑steel tanks. No bentonite was added during fermentation.
