Vinification: Hand‑harvested grapes are placed in small perforated barrels. Immediately after reception, the grapes are de‑stemmed and crushed. Fermentation takes place in stainless‑steel tanks, with temperature controlled at about 23 °C to develop tannins. The wine undergoes a prolonged maceration followed by malolactic fermentation in oak. It then ages for 12 months in French and American oak barrels.
