The grapes were gently crushed with a partial délestage to retain their elegance, of course, aided by automated presses. Fermentation, meticulously controlled via gravity and a touch of nitrogen, remained between 16 and 18 degrees – a delicate approach indeed. A single year in the bottle seemed to simply refine the inherent smoothness. It’s a fantastic pairing for white fish or shellfish, and would undoubtedly complement a good seafood rice dish.”
