Quinta Maria Izabel Vinification: The grapes, sourced from pre‑selected plots, were hand‑harvested with strict vineyard selection. They were transported in 22‑kg crates and then stored in refrigerated containers at 6‑10 °C for 24 hours to preserve their integrity. In the cellar a meticulous hand‑selection on a choice table was performed. The whole grapes were pressed in a pneumatic press, using a gentle pressing. The crystal‑clear must was transferred to stainless‑steel tanks, where it remained for 48 hours for decantation. The alcoholic fermentation occurred with indigenous yeasts at a controlled temperature of 14 °C. Aging: Quinta Maria Izabel spent 8 months on fine lees, with 80 % of the wine aged in French oak barrels and the remainder in stainless‑steel tanks. Winemakers: Dirk Niepoort, Rosário Monteiro.
