Ramilo DOC Colares, produced using organic viticulture. Winemaking: From our Colares Malvasias (2016‑2020), we harvested the lees that, over time, settled at the bottom of the barrels; these were then subjected to a second gravity‑assisted decantation, from which we extracted this wine. The wine was aged for an average of four years in barrels. Winemaking by Jorge Mata. A wine that pairs beautifully with strong cheeses and also complements desserts. In the newspaper *Público* on 6 February 2025, Edgardo Pacheco described the wine as: “a great wine, a tribute to the boldness and irreverence of a winemaker and a producer.” (…) “It is something between a Jerez (Spanish) and a Jura (French), though it leans more toward the latter. Because the wine acquired a flor of yeast in the barrel (a whitish layer of yeast covering the wine), it has notes of dried fruits and citrus. On the palate, it is slightly alcoholic and reminiscent of English cake, with a fine balance between acidity, alcohol and structure. Made from five vintages of Malvasia, it is wonderfully complex with cheeses.” Allergen information Contains sulfites. SKU: 107742
