Rapariga da Quinta The grapes were gently crushed without bruising into stainless‑steel vats. The most important aspects of this vinification are the duration of the pre‑fermentation maceration and the very rigorous extraction practiced at the beginning of the alcoholic fermentation. Fermentation started by inoculating the must with selected yeasts and proceeded in stainless‑steel tanks under temperature control.
