According to the RAE, “Rara Avis” means “an exceptional or hard‑to‑find person or thing,” and with that sense in mind Raúl Pérez has crafted this unprecedented single‑varietal Albarín. It fermented without temperature control, letting the harvest conditions dictate the outcome, and was aged for 18 months in used French oak barrels. The wine offers aromas of woodland, thyme, and ripe white fruit, and delivers a powerful palate with vertiginous acidity.
