“Rascunho” from Quinta de Santiago is a genuinely experimental project – a wine pushing boundaries with a remarkably hands-on approach. Crafted primarily with Alvarinho, this wine eschews convention entirely, starting with no added SO2 and employing extended maceration, whole-cluster pressing, and meticulous batonage.
