This Ribafreixo Cashmere, born from the heart of the Alentejo, clearly spent some time contemplating its future. Those three months in the bottle undoubtedly helped it mature, softening any harsh edges and developing an elegance only time and patience can bestow. It seems this wine knows a good thing when it tastes it – a perfect match with *porco à alentejana* to really showcase its complexity.
