Ribeiro Santo The Dão Demarcated Region is one of Portugal’s oldest wine regions, dating back to 1908. Located in central Portugal, this mountainous area, with elevations ranging from 400 m to 700 m, is anchored by Serra da Estrela, the highest peak in mainland Portugal. The region takes its name from the Dão River, which runs through it. The wines are strongly influenced by the granite terrain and by vineyards situated within pine and eucalyptus forests. **Vineyard** The vineyard follows traditional planting methods and is set on poor granite soil, with large rocky outcrops that offer a view of Serra da Estrela. Viticulture is carried out under an integrated production regime, showing a strong commitment to environmental issues. The combination of cultural practices and the careful use of organic products results in balanced and sustainable wines. **Vinification** The grapes come exclusively from Quinta do Ribeiro Santo. After full drainage, the grapes are pressed and the must is selected. This is followed by a cooling and low‑temperature decantation process.
