This Dão Encruzado, hand-harvested in the second week of September, is a wine brimming with potential – a truly meticulous approach to this deserving grape. The use of battonage – a little French fancy, as some might say – delivers a vibrant acidity and a rather distinctive aroma of lime blossom, almost as if it danced amongst the vines. On the palate, fresh citrus and green apple flavours unfold, culminating in a mineral finish that’s quintessential Dão. Seriously, a great match with grilled fresh fish or a wild berry salad.
