Rather than chasing the elusive ‘perfect’ botrytis, this house favours a more grounded strategy – carefully selecting bunches with a blend of naturally ripe grapes and just a touch of botrytis, yielding a vibrant and wonderfully balanced Tokaji at around 4 puttonyos. A three-month maturation in new oak subtly intensifies the flavours, but the real hallmark is the house’s meticulous precision; a wine that honours tradition without sacrificing practicality. It’s superb with almond cream or fresh goat cheeses.”
