Edouard Delaunay Region: Saint-Romain – Côte de Beaune Appellation: AOP Saint-Romain Pairings Pairs beautifully with sea bass tartare or cod loin with lemon. Presentation Located west of Meursault, at a slightly higher altitude, the village of Saint-Romain produces accessible wines that express all the characteristics of the great whites of the Côte de Beaune, a region recognized worldwide as one of the most prestigious for Chardonnay. Our Saint-Romain offers an introduction to the white terroirs of the Côte de Beaune. Terroir This cuvée comes from the "En Poillange" and "La Périère" parcels, located in the southern part of the appellation, with an eastern exposure that ensures perfect ripening of the grapes. The high altitude (between 320 and 360 metres) gives the wine considerable freshness. The marl and limestone subsoil contains some layers of clay, lending the wine minerality. Winemaking and Ageing The harvest is carried out by hand. After gentle pressing of the grapes, a careful clarification is performed to preserve the aromatic purity and unique character of this terroir. Fermentation takes place entirely in lightly toasted barrels, with 30% new fine-grained oak from the central forests of France. This is followed by 10 months of ageing, punctuated by light batonnages to enhance complexity.
