The name of this wine derives from a shrub that thrives in brackish habitats. Specifically, it is produced in the Natural Park of La Mata, where the vines sit just 50 metres from the sea, giving the wine an unmistakably saline character. It ferments with skins and, midway through the process, is pressed—at which point the skins are removed until the wine dries. In the concrete tank stage the wine offers citrus notes, hints of white flowers, dried olive and juniper, among other aromas.
