Salmos is a tribute to the monks of the Carthusian Order who, in 1095, arrived in Priorat and cultivated the vineyard. In 1835, a violent mob destroyed a lifetime of work and looted the monastery, events that would later culminate in Mendizábal’s disentailment. In 1996, the Torres family began planting vines on the rocky llicorella slopes and started writing the story of this elegant red, with gentle toasted notes and a characteristically mineral profile, as befits wines from this area.
