The National Cellar is committed to storing all wines at the correct temperature and humidity, yet it always chooses to preserve the visual appearance that comes with their age. We typically select brands and regions that excel in old wine tastings. Still, wine is a living organism, like any other, that ages over time, and even within a bottle its aromas evolve in different ways. Our advice is to open the bottle and let it breathe first, which helps release the wine’s natural aromas after many years sealed. Avoid vigorous decanting of old wine, as it can be too aggressive and may even “kill” the tasting. Enjoy the tasting.
