Since 1937, the Caves do Solar de São Domingos company has been producing sparkling wines, aged brandies, bagaceira brandy, and wines from Bairrada and Dão. Its cellars house more than two million bottles of sparkling wine, thousands of bottled wines, and hundreds of French oak barrels used for its famed wine brandies. The “São Domingos” bagaceira brandy, produced in its own distilleries, continues to lead the market with the same quality it has always been known for. In 2006 a modern winemaking centre was inaugurated, enabling the processing of a thousand tonnes of grapes from its own estates and from viticulturists who partner with the company. Constant innovation in production and winemaking techniques has raised the quality and prestige of the house’s wines, reinforcing São Domingos’ competitive standing. Enotourism is also a winning investment, enchanting thousands of visitors each year with the beauty of galleries carved into rock, the millions of bottles, and a showroom, hall, and museum featuring a tasting room—an integral part of the Bairrada Route.
