Since 1937, the company Caves do Solar de São Domingos has been producing sparkling wines, aged brandies, bagasse brandy, Bairrada and Dão wines. Its cellars house more than two million bottles of sparkling wine, tens of thousands of bottled wines, and hundreds of French oak barrels for its famed vinous brandies. The “São Domingos” Bagasse Brandy, produced in proprietary stills, continues to lead the market with its usual quality. In 2006 a modern vinification centre was inaugurated, capable of receiving a thousand tonnes of grapes from the company’s own estates and from growers working in partnership with the firm. Continuous innovation in production and vinification methods has allowed the quality and prestige of the house’s wines to rise, reinforcing São Domingos’s commercial competitiveness. Enotourism is also a winning investment, dazzling thousands of visitors each year with the beauty of the rock‑cut cellars, the millions of bottles, and the showroom, hall and museum with a tasting room—an integral part of the Bairrada Route.
