Since 1937, Caves do Solar de São Domingos has been producing sparkling wines, aged spirits, bagaceira spirit, and Bairrada and Dão wines. Its cellars house more than two million bottles of sparkling wine, thousands of bottled wines, and hundreds of French oak barrels for its renowned wine‑based spirits. The “São Domingos” Bagaceira spirit, made in its own distilleries, continues to dominate the market with its consistent quality. In 2006 a modern winemaking centre was opened, allowing the reception of a thousand tonnes of grapes from the company’s own vineyards and from partner growers. Continuous innovation in production and vinification has elevated the quality and prestige of the house wines, strengthening São Domingos’s competitive edge. Enotourism is also a winning bet, enchanting thousands of visitors each year with the beauty of the rock‑cut cellars, the millions of bottles, and the showroom, hall, and museum with a tasting room—all part of the Bairrada Route.
