Since 1937, Caves do Solar de São Domingos has been producing sparkling wines, aged spirits, bagasse spirits, and Bairrada and Dão wines. Its galleries hold more than two million bottles of sparkling wine, thousands of bottled wines, and hundreds of French oak barrels for its renowned vinic spirits. The “São Domingos” Bagasse Spirit, distilled in its own stills, continues to lead the market with the same quality as always. In 2006 a modern winemaking centre was opened, allowing the company to receive a thousand tonnes of grapes from its own vineyards and from growers working in partnership. Continuous innovation in production and vinification techniques has raised the quality and prestige of the house’s wines, reinforcing the competitiveness of the São Domingos brand. Enotourism is also a winning venture, dazzling thousands of visitors each year with the beauty of rock‑cut galleries, millions of bottles, and a showroom, hall and museum complete with a tasting room, all integral to the Bairrada Route.
