“Seiva” feels like it sprung from a world of ancient traditions. The grapes were harvested with the focus of a hunter, and a third were deliberately left whole in concrete tanks – allowing time itself to shape the wine’s character. The remainder, gently destemmed, underwent a near three-week fermentation culminating in a remarkably intense maceration. The result is a robust and dynamic wine, boasting tannins that elegantly envelop the palate. Grown in centenary vines atop the Serra de S. Mamede, this wine – with its exotic aroma and dry texture – is a testament to the region’s unique terroir and the boldness of its cultivator. It’s fantastic paired with grilled red meats or dishes featuring mushrooms.
