Doctor Climate: Mediterranean, with hot days and cool nights. Soil type: Clay‑lime. Grapes: Antão Vaz (25%), Arinto (25%), Verdelho (25%) and Síria (25%). Vinification: Night‑time manual harvest in 20‑kg crates. The grapes are gently pressed and fermented at 12 °C, partly in stainless‑steel tanks (80%) and the remainder in oak barrels (20%). The wine undergoes intensive bâtonnage for the first 30 days in the barrel. Serving and storage: Serve between 6 °C and 8 °C. Consume at 10 °C. Food pairing: Its acidity, earthy notes and fresh profile make it an excellent accompaniment to mushroom, truffle or root‑vegetable dishes such as beetroot.
