This sparkling wine, crafted using the traditional method, hails from a prime vineyard south of Ancas, in the Anadia municipality, benefiting from a southeast-facing exposure and argilo-calciferous soils – a classic blend of influences from the Atlantic and Mediterranean climates. The grapes undergo careful pressing, followed by fermentation in stainless steel tanks with precise temperature control. Naturally clarified and finished with wild yeasts, the wine then undergoes a patient maturation in the cool cellar before being disgorged without added sugar, resulting in a sophisticated and elegantly dry espumante, perfect with seafood or light appetizers.
