Sidónio de Sousa This wine comes from a vineyard located south of the town of Ancas in the municipality of Anadia, in the privileged area of Figueira da Costa. The vineyards receive east‑west sunlight, and the soils are a mix of clay and limestone. The climate is a mild Mediterranean type, with gentle winters and warm summers, offering the ideal conditions of a transition zone where Atlantic and Mediterranean influences combine. The vineyard follows an Integrated Production System. **Vinification:** The grapes are partially destemmed and refrigerated in the cellar, then crushed in small open vats where the skins are macerated and fermentation begins, without the addition of enzymes or commercial yeast. The pressing is done manually with wooden mats to enhance the extraction of the varietal characteristics. **Stage:** After fermentation in the small open vats, the wine is transferred to cement tanks and stainless‑steel vessels where it rests until January of the following year.
