This Sidónio de Sousa Reserva, straight from the Bairrada, is a delightful demonstration that tradition and modernity can really tango. Primarily Bical, of course, but with a welcome contribution from Fernão Pires and Cerceal – a complexity that genuinely makes you question whether you’re tasting wine or a little bit of magic. Remarkably concentrated and full-bodied, having earned a gold medal at the Decanter World Awards, it pairs beautifully with rich black pork dishes to tame its acidity and intensity.
