Producer Sottimano owns five vineyards—Barbaresco, Currà, Cottà, Fausoni, Pajorè, and Basarin—along with Dolcetto Bric del Salto, Barbera Pairolero, and Mate, and also produces a red wine made from the Brachetto grape. In the cellar, the winemaking philosophy is distinct: natural yeasts, long macerations, and a year of “sur lie” aging to allow malolactic fermentation following the region’s traditional methods.
