This 1863 “Single Harvest” from Taylor’s feels like it’s stepped straight out of a time capsule – and with an utterly captivating nose. Produced from the last great Vintage before the phylloxera blight, it’s been patiently aged for over a century and a half in oak casks, earning a remarkable 98/100 from Neil Martin. It’s a remarkably dense and complex wine, defying its age with a vibrant energy. A true collector’s treasure, of course, but perfectly suited to accompany expertly aged cheeses or a quality red meat – a wine that deserves a pairing as exceptional as itself.
