This Cabornet from Telmo Rodríguez is a worthwhile adventure to seek out. Born from rocky slopes in the Bibei Valley, with vines already 80 years old, the wine unveils a surprisingly complex blend of Mencía, Sousón, and others, all thriving on a granite soil so austere it forces the grapes to work intensely. Wild yeast fermentation adds a touch of mystery, while Telmo Rodríguez’s meticulous aging in French oak delivers an elegance that even Robert Parker and James Suckling recognized – awarding it a perfect 96/100 each. A fantastic pairing would be with rich, fatty game meats or grilled fish.
