The Tokaj region, Tokaj‑Hegyalja, lies in a mountain range in northeastern Hungary. The town of Tolcsva and the Oremus cellars sit at the geographic centre of this area. In 2002 the UNESCO World Heritage Committee recognised Tokaj’s exceptional winemaking conditions, its centuries‑old capacity to nurture culture, and its value, granting it World Heritage status. In 1993, just three years after the fall of communism, the Álvarez family turned to Hungary and founded Tokaj‑Oremus Vineyards & Wineries. The estate’s activities are based mainly in Tolcsva, where a modern winery was built in 1999 and is linked to the labyrinth of cellars that have existed there since the 13th century. Thus, the Álvarez family placed great emphasis on a respectful, detailed study of this wine to establish its production process and history. (illustrative image only)
