Ultreia Saint Jacques is conceived as a tribute to life, a personal reminder from Raúl Pérez of the idea of keeping one’s feet on the ground and, perhaps, it is the wine he identifies most with among all those he produces (and those are many). It ferments in barrels with rasp and undergoes a long maceration, with no temperature control. A fluid, light and juicy red wine that can be bought in dozens.
